Just wondering if there is a way to tell the rear end ratio with Out pulling the diff cover. Is it tagged on the diff somewhere or in the vin?

The year of the car will give you a round about idea of what gear it has. Chances are if it came off the street it was never changed or swapped out.
76 & 77 had 3.70 or 4.11. If it had the optional 1.6 in 1976 it had a 4.11, if it had an automatic transmission in 1977 it had a 4.11. Otherwise it was a 3.70.
78 - 80 or 81? had 3.70 only
81 or 82? through 87 had 3.36. Select few models in 84 & 85 had a 3.61. No special options were required to have the 3.61, possibly a customer order option?

There's also a quick way of checking without pulling the plate, but in the end I always pull the plate to make sure the ring and pinion are in good shape.
Jack the rearend up, mark the driveshaft, and mark the tire. Count how many times the driveshaft turns for 1 revolution of the tire. Less than 3 1/2 times = 3.36, more than 3 1/2 times = 3.61 or 3.70, More than 4 times = 4.11.
