I have a 79 with 60,000 miles. I would like to keep the stock bottom end for now. This will be a street car. How can this be done/can it be done?
I was thinking 350 cfm carb, port and polish, header, cam(don't know which because I'm still learning about them but it would probably be lunati) and things like good plugs and wires. Would this get me close??

It depends on the condition of the bottom end. You would want to do a cylinder leak down test before disassembling. Even at that, i would recommend at least putting new rings in the bottom end. The more compression you can build the more horsepower it's going to produce. Checking piston to cylinder wall clearances, checking and setting ring end gaps, even going with a Total Seal gapless ring would be highly recommended.
Once you have a solid bottom end, then you can build a head with confidence. If you've never ported and polished a head, leave it alone, you can do more damage than good. A good multi-angle valve job and bowl porting with a guide and seat machine will help alot. Depending on what type of fuel you plan on running, mill the head for more compression. You could mill one about .050" and still be ok on 93 octane. You will most likely have to adjust your ignition timing for maximum performance.
An aftermarket camshaft can help or hurt the performance. If you select one too large or dont degree it in, you would be better off with a stock cam. Determine what RPM range you will be running this engine, and select a camshaft to match. Degree it in!!! I can't stress that enough! If you look under Tech Tips in this section, its explained in detail.
You can get over 100HP out of it if you do it right.

I forgot to mention that this is somewhat of a budget build and I don't know a lot about engines yet. I spoke to you through e-mail and the blueprinted head and such is out of my money range because I retread tires for a living. What ever I do I will take my time and do it right. I'll probably try the things I listed and take some of your suggestions as well and just see how it goes. Hopefully I can get this done in a reasonable amount of time and post dyno results.
Would an electric fan make a noticeable difference? A lot of people seem to mention it.

Assuming my bottom end is good will a weber 32/26, the fastcompany header and takeing .050 off the head get me my 100hp? fastcompany tells me their header will give me 30hp.
